Can banana bread cookies be made gluten-free?
Although this recipe is not gluten-free, it can easily be modified to be made without gluten. Simply swap out the all-purpose and whole wheat flours for gluten-free flour alternatives. My favorite gluten-free flour for baking is Bob's Red Mill Gluten-Free 1-to-1 Baking Flour. I would also recommend Bob's Red Mill Almond Flour for a nut-based gluten-free flour.
Can you make this cookie recipe without chocolate chips?
Of course! These banana bread cookies taste great even without chocolate chips in them. In place of the chocolate chips, feel free to substitute them for chopped pecans or walnuts. If you are missing the sweetness, add in some unsweetened dried cranberries for a pop of color and flavor.
