Stave off the Monday blues by starting off your week with a lil' somethin' sweet and healthy! I made a few dozen of these muffins to keep on hand in the freezer so I can take a few out at a time. After I finish getting ready for the day I can enjoy them with a cup of coffee and prevent any hangry road rage on my way to work HAHAHA
INGREDIENTS
1 ¾ cups whole wheat flour
½ tsp sea salt
½ tsp cinnamon
¼ tsp nutmeg
¼ tsp clove
1 tsp baking soda
⅓ cup coconut oil, melted
½ cup maple syrup
2 eggs, room temperature
3 very ripe bananas, mashed
¼ cup plant-based milk, room temperature
Zest of 1 lemon or orange
2 tsp vanilla extract
⅓ cup old-fashioned oats
¼ cup dried cranberries, optional
¼ cup chopped walnuts or pecans, optional
Brown sugar for sprinkling on top
Old-fashioned oats for sprinkling on top
DIRECTIONS
Preheat oven to 325°F. Line a 12-cup muffin pan with cupcake liners. Set aside.
In a large bowl, sift together the first 6 ingredients with a sieve. Set aside.
In the bowl of a stand mixer, beat the coconut oil and maple syrup together. Mix in the eggs one at a time, followed by the mashed bananas, vanilla extract, milk, and lemon or orange zest.
Gradually mix in the flour mixture to the wet ingredients in small batches until just combined. Using a spatula, scrape the sides of the bowl and mix in any lingering dry ingredients.
Add the oats and any optional ingredients and mix until just combined.
Divide the batter evenly between the muffin cups using a quarter cup (NOTE: If you are making mini muffins using a mini muffin pan, use a tablespoon to divide the batter). Once divided, lightly sprinkle the top of each muffin with brown sugar followed by a sprinkle of oats.
Bake for 20-25 minutes, or until a toothpick inserted into a muffin comes out clean (NOTE: If you are making mini muffins, only bake for about 15-20 minutes).
Remove the pan from the oven and place on a wire cooling rack to cool for 5 minutes before transferring the muffins to the rack to cool completely. Once cool, enjoy with a schmear of unsalted butter, preserves, and/or jam.
