INGREDIENTS
1 cup non-fat Greek yogurt
¼ cup fat free or reduced fat feta cheese
2 garlic cloves, peeled & minced
½ English cucumber, seeded & grated (about ½ cup)
2 tbsp fresh dill, finely chopped
1 tbsp fresh Italian parsley, finely chopped
Zest of 1 lemon
Juice of ½ lemon
½ tbsp extra virgin olive oil
¼ tsp kosher salt
½ tsp black pepper
DIRECTIONS
Add all of the ingredients to a medium mixing bowl and mix until well combined. Cover with plastic wrap or place in an airtight container and refrigerate for at least 30 minutes to 1 hour before serving to allow the flavors to blend.
